Making something new, tasty and nutritious for the lunch box every day is a big challenge for every mother. In such a situation, tiffin can be made special by combining simple food with modern taste. These 5 recipes prepared from oats, ragi, paneer and pulses not only take care of the health of children, but are also attractive to look at. These can be prepared easily at home.


1. Oats-Ragi Pinwheel Rolls


Material



  • half cup ragi flour

  • 2 tbsp oats flour

  • 1 tsp soybean flour

  • 1 tsp wheat flour

  • a pinch of baking powder

  • 1 pinch salt

  • Milk or water as per requirement


Filling Ingredients:



  • 1/4 cup mashed cheese

  • 2 tbsp chopped and soaked figs

  • 2 tbsp chopped nuts

  • 2 tsp tutti-frutti

  • 2 tsp sugar powder


Other Ingredients:



  • oil for frying

  • Jam of favorite fruits for spread

  • Roasted poppy seeds and cherries for garnish



Method of preparation


Prepare a thick batter by mixing all the pancake ingredients in a large bowl. After 10 minutes, make cheela with this solution on a non-stick pan. After all the cheelas are prepared, mix the filling ingredients well.


Now apply jam on each cheela and spread a thin layer of the filling. Spread the ingredients only up to three-fourths of the cheela, so that it does not come out while rolling. Roll the cheela carefully, wrap it in aluminum foil and keep it in the refrigerator to set for 2 to 3 hours.


After setting, cut the rolls into thin pieces and shape them into pinwheels. Finally garnish with roasted poppy seeds and cherries and pack in a lunch box.


2. Sweet Cream Sandwich


Material



  • 3 slices bread

  • 4 tbsp fresh cream

  • 3 tsp powdered sugar or as per taste

  • a few grains of sugar

  • 2 tbsp mixed dry fruits

  • 2 tbsp butter


To decorate:



  • Mix Dry Fruits

  • glazed cherries


Method of preparation



Add sugar powder to the cream, beat it well and chop the dry fruits. Spread cream on a bread slice. Sprinkle some sugar and chopped nuts on top. Place another bread slice on top of it.


Now spread cream on the second slice, add sugar and nuts and cover with the third bread slice. Apply butter on both sides and cook in a grilled sandwich maker until crisp.


After the sandwich is ready, cut it from the middle and decorate with nuts and cherries. When it cools down, keep it in the lunch box.


3. Ragi Oats Waffles


Material



  • 1 cup ragi flour

  • 1/4 cup oats powder

  • 1/4 cup wheat flour

  • 1 tsp ginger paste

  • salt as per taste

  • 1/4 tsp baking soda

  • Olive oil as required

  • a little grated fresh coconut

  • chopped fresh coriander

  • favorite sauce



To decorate:



  • Cucumber

  • Tomato

  • fresh coriander

  • fresh coconut


Other Ingredients:



  • Waffles Toaster


Method of preparation


Prepare a thick batter by mixing all the other ingredients except oil in ragi flour. Heat the waffle toaster and apply olive oil on it. Pour the batter in the toaster and apply some oil on top with the help of a brush.


Close the toaster and cook for 10 to 12 minutes. Once cooked well, cut it into desired shapes. Sprinkle coriander and coconut on top. Garnish with cucumber and tomato and keep in the lunch box.


4. Aloo Masala Stuffed Mini Pancakes


Material



  • 1 cup coarsely ground oats

  • quarter cup semolina

  • 1 cup buttermilk

  • 1/2 tsp baking soda

  • 1 tsp ground black pepper

  • 1/2 tsp ground cumin

  • salt as per taste

  • oil as required



Stuffing Masala:



  • 4 potatoes boiled and mashed

  • 1 cup chopped onion

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 6-7 curry leaves

  • salt as per taste

  • 1/4 tsp turmeric powder


How to make filling masala


Heat the pan and fry mustard seeds, onion and curry leaves on medium flame. Once the onion is lightly roasted, add salt and turmeric. Now add mashed potatoes to it and cook for 2 to 3 minutes.


Pancake Recipe


Mix all the pancake ingredients except oil in a bowl and prepare a thick batter. Heat the pan, apply some oil and spread some batter with a spoon like cheela.


Now make small tikkis of the prepared potato masala and place them on the cheela and pour a spoonful of batter over it and cover it. Cook on low flame until golden on both sides. Similarly, prepare pancakes from the remaining batter.


Cut each pancake in half and pack in a tiffin with favorite chutney.


5. Oats Masoor Dal Smiley


Material



  • 1/2 cup boiled black lentils

  • 2 potatoes boiled and mashed

  • 1 tsp ginger-garlic paste

  • 2 tbsp oats flour

  • 2 tsp corn flour

  • Salt and pepper to taste


Other Ingredients:



  • oil for frying

  • tomatoes for garnish

  • corn

  • Cheese

  • bud urad soaked


Method of preparation


Place the boiled lentils in a strainer and drain out all the water. After this grind it in a mixer. Prepare the smiley mixture by mixing ground lentils and all other ingredients in a vessel.


Divide the mixture into equal parts and give it a round shape and shape it into a smiley with the help of a smiley cutter or spoon. Heat oil in a pan and fry them on medium flame till they turn golden.


Place the fried smileys in a plate. Make lips from tomatoes, teeth from corn and eyes from cheese and black urad. Place the prepared smileys in the lunch box.
